How to Make Thai Rice Porridge (Khao Tom)

Thai rice porridge, commonly known as Khao Tom, is a comforting and nutritious dish traditionally enjoyed for breakfast or as a light meal. It’s simple to make and can be customized with various toppings. Here’s a step-by-step guide on how to prepare this delicious dish.

Ingredients

To make Khao Tom, gather the following ingredients:

  • 1 cup jasmine rice
  • 8 cups water or chicken broth
  • 1 tablespoon salt (adjust to taste)
  • 2 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • Fresh ginger, sliced (optional)
  • Toppings: chopped green onions, fresh cilantro, fried garlic, sliced chilies, soy sauce, and a protein of your choice (like chicken, shrimp, or tofu)

Instructions

Step 1: Prepare the Rice

Rinse the jasmine rice under cold water until the water runs clear. This helps to remove excess starch and prevents the porridge from becoming too sticky.

Step 2: Cook the Base

In a large pot, heat the vegetable oil over medium heat. Add the minced garlic and sliced ginger (if using) and sauté until fragrant, about 1-2 minutes.

Step 3: Combine Ingredients

Add the rinsed rice to the pot and stir to coat it with the garlic and oil. Pour in the water or chicken broth, and add salt. Increase the heat to bring the mixture to a boil.

Step 4: Simmer the Porridge

Once boiling, reduce the heat to low and cover the pot. Allow the porridge to simmer for about 30 to 40 minutes, stirring occasionally. You can add more water if you prefer a thinner consistency.

Step 5: Add Protein and Toppings

If you are using a protein like chicken or shrimp, add it to the pot during the last 10 minutes of cooking to ensure it’s cooked through. Once the porridge reaches your desired consistency, remove it from the heat.

Step 6: Serve and Enjoy

To serve, ladle the porridge into bowls and garnish with your choice of toppings such as chopped green onions, fresh cilantro, fried garlic, sliced chilies, and a drizzle of soy sauce. Enjoy Khao Tom hot, and savor the comforting flavors!

Tips for Making Perfect Khao Tom

  • Experiment with different toppings based on personal preference or dietary restrictions.
  • For a richer flavor, consider using homemade chicken broth instead of water.
  • If you like a stronger taste, add a splash of fish sauce or soy sauce to your porridge.

Khao Tom is not just delicious; it’s also versatile and can be enjoyed any time of the day. Whether served plain or loaded with toppings, this Thai rice porridge will surely comfort and satisfy your taste buds.
