Ingredients: - 1 lb white fish fillets (such as cod or tilapia), chopped into chunks - 1 egg - 2 tablespoons red curry paste - 2 tablespoons fish sauce - 1 tablespoon sugar - 1 tablespoon cornstarch - 1 handful green beans, finely chopped - 1 handful fresh coriander leaves, chopped - Vegetable oil for frying

Instructions: 1. In a food processor, blend the fish fillets until they form a smooth paste. 2. Transfer the fish paste to a large mixing bowl and add the egg, red curry paste, fish sauce, sugar, and cornstarch. Mix well to combine. 3. Add the chopped green beans and coriander leaves to the fish mixture and mix until evenly distributed. 4. Using your hands, shape the mixture into small patties or balls. You can wet your hands with water to prevent sticking. 5. Heat vegetable oil in a pan over medium heat. Once the oil is hot, fry the fish cakes in batches until golden brown and cooked through, about 2-3 minutes per side. 6. Remove the fish cakes from the pan and drain on a paper towel to remove excess oil. 7. Serve the Thai fish cakes hot with a side of sweet chili sauce or cucumber relish.
