Instructions

Step 1: Prepare the Duck

Begin by scoring the skin of the duck breasts in a crisscross pattern, being careful not to cut into the meat. This allows the fat to render out and makes the skin crispier.

Step 2: Marinate the Duck

In a small bowl, combine five-spice powder, soy sauce, oyster sauce, honey, minced garlic, and grated ginger. Mix well to create the marinade. Rub this mixture all over the duck breasts, ensuring they are well coated. Let them marinate for at least 30 minutes, or up to two hours if you have time for more flavor infusion.

Step 3: Cook the Duck

Heat the vegetable oil in a skillet over medium heat. Once the oil is hot, place the duck breasts skin-side down in the skillet. Cook for about 6-8 minutes or until the skin is golden brown and crispy. Carefully flip the duck breasts and reduce the heat to low. Cook for an additional 4-5 minutes, or until the internal temperature reaches 135°F (medium-rare). Adjust cooking time for your preferred doneness.

Step 4: Make the Sauce

After removing the duck from the skillet, let it rest for about 5 minutes. Meanwhile, in the same skillet, add any remaining marinade and the sliced red chili. Bring the mixture to a simmer over medium heat, scraping up any browned bits from the pan. Let it reduce slightly for about 3-4 minutes.

Step 5: Serve

Slice the duck breasts thinly and arrange them on a plate. Drizzle the five-spice sauce over the top, and garnish with fresh basil leaves for added flavor and color. Serve alongside fluffy jasmine rice to soak up the delicious sauce.
