Instructions

Step 1: Prepare the Lychee

Start by draining the lychees from the syrup. Reserve the syrup to use later if desired. Chop the lychees into small pieces, setting aside the whole ones for garnish.

Step 2: Make the Coconut Base

In a saucepan over medium heat, combine the coconut milk and sugar. Stir well until the sugar dissolves completely. Add a pinch of salt and the vanilla extract for extra flavor. Keep the mixture warm but do not bring it to a boil.

Step 3: Combine Agar-Agar

In a separate bowl, mix the agar-agar powder with a small amount of water (about 100ml) to dissolve. Once dissolved, add this mixture to the warm coconut milk. Stir continuously until the agar-agar is completely incorporated and the mixture begins to thicken, which should take about 5-7 minutes.

Step 4: Add Lychee

Fold in the chopped lychees gently into the coconut mixture. Ensure they are evenly distributed throughout the pudding base.

Step 5: Set the Pudding

Pour the lychee and coconut mixture into serving cups or a large mold. Allow it to cool at room temperature for about 15-20 minutes. Once it has cooled slightly, place it in the refrigerator for at least 2-3 hours to set fully.

Step 6: Serve

Once the pudding has set, remove it from the refrigerator. If you used a mold, carefully invert it onto a plate. Garnish with whole lychees and mint leaves for a beautiful presentation. Drizzle some reserved lychee syrup over the top for added sweetness if desired.
