How to Make Thai Custard-Filled Pastries

Thai custard-filled pastries, known as “Sangkhaya” or “Khanom Krok,” are a delightful treat that showcases the rich flavors of Thai cuisine. These pastries combine a flaky pastry shell with a creamy, sweet custard filling, making them a perfect dessert for any occasion. Ingredients

To make Thai custard-filled pastries, you will need the following ingredients:

  • For the pastry:
    • 2 cups all-purpose flour
    • 1/2 cup unsalted butter, chilled and cubed

    • 1 cold egg yolk
    • 3-4 tablespoons ice water

    • 3/4 cups palm sugar (or brown sugar)

    • 1/4 teaspoon salt

Instructions

Step 1: Prepare the Pastry Dough

In a large mixing bowl, combine the all-purpose flour, sugar, and salt. Add the chilled butter, using your fingers or a pastry cutter, mix until the mixture resembles coarse crumbs.
Next, add the cold egg yolk and mix gently. Slowly incorporate the ice water, one tablespoon at a time, until the dough begins to form. Be careful not to overmix.
Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Step 2: Make the Custard Filling

In a saucepan over medium heat, combine the coconut milk and palm sugar. Stir until the sugar has melted completely. Allow the mixture to cool slightly before adding the eggs, vanilla extract, and salt. Whisk the ingredients together until well combined. Strain the mixture through a fine sieve to ensure a smooth custard.

Step 3: Assemble the Pastries

Preheat your oven to 350°F (175°C). On a lightly floured surface, roll out the chilled pastry dough to about 1/8 inch thick. Using a round cutter, cut out circles that will fit a muffin tin.
Place the pastry circles into the muffin tin, pressing gently to fit the shape. Fill each pastry shell with the custard filling, leaving a little space at the top as it will rise during baking.

Step 4: Bake

Bake the pastries in the preheated oven for about 20-25 minutes, or until the custard is set and the pastry is golden brown. Keep an eye on them to avoid over-browning. Once baked, remove them from the oven and allow them to cool in the tin for a few minutes before transferring to a wire rack.

Step 5: Serve and Enjoy

Once cooled, you can dust your Thai custard-filled pastries with some powdered sugar for extra sweetness. Serve them warm or at room temperature as a delightful dessert. They are perfect for sharing with family and friends during gatherings or simply indulging in a sweet treat after dinner.
