  • 2 tablespoons red curry paste
  • Juice of 1 lime
  • Fresh basil leaves for garnish
  • Salt and pepper to taste

Instructions

Step 1: In a large pot, heat a small amount of oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.

Step 2: Stir in the red curry paste and cook for another minute, allowing the flavors to meld together.

Step 3: Pour in the vegetable broth and bring to a gentle simmer. Add the chopped carrots, bell peppers, and mushrooms. Let the soup simmer for about 5-7 minutes, or until the vegetables are tender.

Step 4: Add the baby corn and snap peas to the pot. Then, slowly pour in the coconut milk, stirring well to combine.

Step 5: Season the soup with soy sauce or tamari, adjusting to taste. Allow the soup to simmer for an additional 5 minutes.

Step 6: Remove the pot from heat and stir in the lime juice. Taste and adjust the seasoning with salt and pepper as needed.

Step 7: Serve the soup hot, garnished with fresh basil leaves to enhance the aroma and flavor.
