How to Make Thai Vegetable Spring Rolls

Thai vegetable spring rolls are a delicious and healthy snack or appetizer that can be enjoyed by everyone, from vegetarians to meat lovers. To make approximately 12 spring rolls, you will need the following ingredients:

  • 1 cup of shredded cabbage
  • 1 cup of grated carrots
  • 1 cup of bean sprouts
  • 1/2 cup of finely chopped bell peppers (red, yellow, or green)
  • 1/4 cup of chopped fresh cilantro
  • 1 tablespoon of soy sauce
  • 1 tablespoon of sesame oil
  • 12 rice paper wrappers
  • Vegetable oil for frying

Instructions

Step 1: Prepare the Filling

In a large bowl, combine the shredded cabbage, grated carrots, bean sprouts, bell peppers, and chopped cilantro. Drizzle with soy sauce and sesame oil, then mix well until all the vegetables are coated evenly.

Step 2: Soak the Rice Paper Wrappers

Fill a shallow dish or plate with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds, or until it becomes soft and pliable. Carefully remove it from the water and lay it flat on a clean surface.

Step 3: Assemble the Spring Rolls

Place a small amount of the vegetable filling (about 2 tablespoons) in the center of the rice paper wrapper. Fold the bottom edge over the filling, then fold in the sides, and roll it up tightly from the bottom to the top. Make sure it's secure but not too tight to avoid tearing the wrapper. Repeat this process with the remaining wrappers and filling.

Step 4: Fry the Spring Rolls

Heat vegetable oil in a deep frying pan over medium-high heat. Carefully place a few spring rolls in the oil, making sure not to overcrowd the pan. Fry them for about 3-4 minutes or until they turn golden brown and crispy. Use a slotted spoon to remove the rolls and drain them on paper towels to absorb excess oil.
