How to Cook Thai-Style Braised Duck

Thai-style braised duck is a delicious and aromatic dish that combines the rich flavors of duck with the fragrant spices and herbs typical in Thai cuisine. Ingredients

  • 1 whole duck (about 4-5 lbs)
  • 4 cups water
  • 4 tablespoons soy sauce
  • 2 tablespoons fish sauce
  • 2 tablespoons brown sugar
  • 4 cloves garlic, crushed
  • 2-3 star anise pods
  • 1 stick cinnamon
  • 1 tablespoon ginger, sliced
  • 1-2 red chilies, sliced (optional for spice)
  • Fresh basil or cilantro for garnish
  • Salt and pepper to taste

Instructions

Step 1: Prepare the Duck
Begin by rinsing the whole duck under cold water. Pat it dry with paper towels and season the inside and outside with salt and pepper. This helps to enhance the flavor of the meat.

Step 2: Searing the Duck
In a large pot or Dutch oven, heat a tablespoon of oil over medium-high heat. Once hot, place the duck breast-side down and sear for about 5-7 minutes until golden brown. Turn the duck over and sear the other side for another 5-7 minutes. Remove the duck and set it aside.

Step 3: Create the Braising Liquid
In the same pot, add the crushed garlic, sliced ginger, and star anise. Stir them for about 1-2 minutes until fragrant. Then, pour in the water, soy sauce, fish sauce, and brown sugar. Mix well to combine all the flavors.

Step 4: Braise the Duck
Return the duck to the pot, making sure it is fully submerged in the braising liquid. If needed, add more water to cover the duck. Bring the liquid to a boil, then reduce the heat to low. Cover the pot and let the duck braise for 1.5 to 2 hours until the meat is tender and falls off the bone. Turn the duck occasionally to ensure even cooking.

Step 5: Serve the Duck
Once cooked, remove the duck from the pot and let it rest for a few minutes. Strain the braising liquid to remove the solids and keep it as a sauce. Cut the duck into serving pieces and plate it with a generous drizzle of the rich braising sauce over the top.

Step 6: Garnishing
Garnish your Thai-style braised duck with fresh basil or cilantro for an added pop of color and flavor. Serve it alongside steamed rice or noodles to soak up the delicious sauce.
