Ingredients

To make Thai-style BBQ pork rice, you will need the following ingredients:

  • For the BBQ pork:
    • 500g pork shoulder or tenderloin, thinly sliced
    • 3 tablespoons soy sauce
    • 2 tablespoons oyster sauce
    • 1 tablespoon fish sauce
    • 2 tablespoons sugar
    • 2 cloves garlic, minced
    • 1 teaspoon white pepper
    • 3 tablespoons honey
    • Oil for grilling
  • For the rice:
    • 2 cups jasmine rice
    • 4 cups water or chicken broth
    • Salt, to taste
  • For serving:
    • Cucumber slices
    • Fresh cilantro
    • Chili sauce or sweet soy sauce

Instructions

Marinating the Pork

1. In a bowl, combine soy sauce, oyster sauce, fish sauce, sugar, minced garlic, and white pepper. Mix well to create the marinade.

2. Add the sliced pork to the marinade, ensuring each piece is well-coated. Cover and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

Cooking the Rice

1. Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.

2. In a pot, combine the rinsed rice and water or chicken broth. Add a pinch of salt for flavor. Bring to a boil, then reduce the heat to low and cover. Cook for about 15 minutes, or until the rice is tender and water is absorbed.

3. Once cooked, remove the pot from heat and let it sit covered for another 5 minutes before fl fluffing the rice with a fork.

Grilling the Pork

1. Preheat your grill or a grill pan over medium-high heat. Brush with a little oil to prevent sticking.

2. Remove the pork from the marinade, allowing excess to drip off. Reserve leftover marinade for basting.

3. Grill the pork slices for about 5-7 minutes on each side or until they develop a beautiful char and are cooked through. Baste with the leftover marinade while grilling to enhance the flavor.

Plating and Serving

1. To serve, place a generous scoop of fluffy jasmine rice on a plate.

2. Add the grilled pork slices on top of the rice, garnishing with cucumber slices and fresh cilantro.

3. Serve with chili sauce or sweet soy sauce on the side for dipping. Enjoy your homemade Thai-style BBQ pork rice!
