Instructions:

  1. Soak the rice noodles in hot water for about 30 minutes or until soft. Drain and set aside.
  2. Heat vegetable oil in a large pan over medium heat. Add garlic and stir-fry until fragrant.
  3. Add shrimp or chicken and cook until done. Push the mixture to one side of the pan.
  4. In the cleared space, crack in the eggs and scramble them. Mix with the protein once cooked.

2. Green Curry Chicken

This aromatic dish is a staple in Thai households. The combination of green curry paste and coconut milk creates a rich, delightful flavor.

Ingredients:

  • 1 lb chicken thighs, cut into bite-sized pieces
  • 2 tablespoons green curry paste
  • 1 can (400 ml) coconut milk
  • 1 cup chicken broth
  • 1 cup bell peppers, sliced
  • 1 cup Thai basil leaves
  • 1 tablespoon fish sauce
  • 1 tablespoon sugar

Instructions:

  1. In a large pot, heat a bit of oil over medium heat and add green curry paste. Stir until fragrant.
  2. Add chicken and cook until it is mostly cooked through.
  3. Pour in coconut milk and chicken broth, then bring to a simmer.

3. Massaman Curry

Massaman curry combines Thai and Indian flavors, making it a unique and comforting dish. It usually features beef, potatoes, and peanuts.

Ingredients:

  • 1 lb beef, cut into chunks
  • 2 tablespoons massaman curry paste
  • 1 can (400 ml) coconut milk
  • 2 cups beef broth
  • 2 potatoes, diced
  • 1 onion, chopped
  • 1 tablespoon fish sauce
  • 1 tablespoon tamarind paste
  • 1/4 cup roasted peanuts

Instructions:

  1. In a large pot, heat oil and sauté onions until translucent.
  2. Add massaman curry paste and cook briefly.
  3. Add beef and brown on all sides.
  4. Pour in coconut milk and beef broth, then bring to a simmer.
