Step 2: Create the Batter

In a mixing bowl, combine the rice flour, tapioca flour, and sugar. Gradually add coconut milk and water while stirring to form a smooth batter. Divide this mixture into two equal parts. Keep one part plain, and mix pandan juice into the other part.

Step 3: Prepare the Steamer

Fill your steamer with water and bring it to a boil. While waiting for the water to heat, lightly grease the cake pan or mold with oil to prevent sticking.

Step 4: Steam the Layers

Pour a layer of the plain batter (about 1/2 inch thick) into the prepared pan. Cover with a lid and steam for 10-15 minutes or until set. Once done, remove the lid and let it cool slightly.

Once the first layer has cooled, pour a layer of the pandan batter on top, again about 1/2 inch thick. Cover and steam for another 10-15 minutes. Repeat this process, alternating between the plain batter and pandan batter until you have used up all the batter.

Step 5: Cool and Serve

After steaming the last layer, let the cake cool completely at room temperature. Once cooled, carefully remove the cake from the pan by flipping it onto a serving plate. You can cut it into squares or any shape of your choice.

Thai Pandan Layer Cake can be enjoyed immediately or stored in the refrigerator for a few days. Serve it chilled as a refreshing dessert!
