Khanom Chan (Layered Coconut Dessert)

Khanom Chan is a beautiful, multi-layered dessert that showcases the harmony of coconut and pandan flavor.

Ingredients:

  • 1 cup rice flour
  • 1 cup coconut milk
  • 1 cup sugar
  • 1 cup water
  • 1 teaspoon pandan juice (optional)
  • 1/4 teaspoon salt

Instructions:

  1. In a mixing bowl, combine the rice flour, sugar, and salt. Gradually stir in the coconut milk and water until the mixture is smooth.
  2. Divide the mixture into two bowls. In one bowl, add pandan juice to give it a green color and flavor.
  3. Prepare a steaming tray lined with banana leaves or parchment paper. Pour a thin layer of the white mixture into the tray and steam for about 10 minutes.
  4. Once set, pour a layer of the green mixture over the white layer and steam for another 10 minutes. Repeat this process until you've used all the batter, ending with the green layer.
  5. Chill before cutting into squares and serving.

Mango Sticky Rice (Khao Niew Mamuang)

One of Thailand's most beloved desserts, Mango Sticky Rice combines sweet coconut sticky rice with ripe mango slices.

Ingredients:

  • 1 cup glutinous rice
  • 1 cup coconut milk
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 2 ripe mangoes, sliced
  • Sesame seeds or mung beans for garnish

Instructions:

  1. Soak the glutinous rice in water for at least 4 hours or overnight, then drain.
  2. Steam the rice for about 30 minutes, or until cooked and tender.
  3. In a saucepan, combine coconut milk, sugar, and salt over low heat. Stir until the sugar dissolves.
  4. Once the rice is cooked, mix in half of the coconut sauce and let it sit for 30 minutes to absorb the flavors.
  5. To serve, place a portion of sticky rice on a plate, top with mango slices, and drizzle with the remaining coconut sauce. Sprinkle with sesame seeds or mung beans for added texture.

Instructions:

  1. Rinse the tapioca pearls until the water runs clear.

  3. Once cooked, drain and rinse under cold water to stop the cooking process.
  4. In another pan, combine coconut milk, sugar, and salt over low heat until the sugar dissolves.
