  • 8 rice paper sheets
  • 1 cup cooked vermicelli rice noodles
  • 1 cup shredded carrots

  • 1 cup bean sprouts

  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice

Instructions

Step 1: Prepare the Ingredients

Start by preparing all your ingredients. Cook the vermicelli rice noodles according to the package instructions, then drain and set aside. Wash and slice the vegetables and fresh herbs. Having everything ready makes the rolling process much easier.

Step 2: Soak the Rice Paper

Fill a shallow bowl or dish with warm water. Take one rice paper sheet at a time and dip it into the warm water for about 10-15 seconds until it becomes soft and pliable. Carefully lift it out and lay it flat on a clean, damp surface.

Step 3: Assemble the Rolls

On the lower third of the soaked rice paper, place a small amount of cooked vermicelli noodles, shredded carrots, sliced cucumbers, bean sprouts, fresh herbs, and a few avocado slices. Be careful not to overfill, as this can make rolling difficult.

Step 4: Roll the Rice Paper

Starting from the bottom, fold the rice paper over the filling. Tuck in the sides to seal the filling inside, and then continue rolling tightly until you reach the top edge of the rice paper. Repeat this process for all the rice paper sheets.

Step 5: Serve with Dipping Sauce

Once all the rolls are prepared, arrange them on a serving platter. Drizzle with a little soy sauce and lime juice, or serve with your favorite dipping sauce, such as peanut sauce or hoisin sauce. Enjoy these fresh and zesty Thai vegetarian rice paper rolls!
