Ingredients:

  • 1 red bell pepper, thinly sliced
  • 1 cucumber, julienned
  • 1/4 cup red cabbage, shredded
  • 1/4 cup fresh cilantro, chopped

For the Peanut Dressing:

  • 1/2 cup creamy peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar

  • 1-2 tbsp water (to thin)
  • 1 tsp sesame oil
  • 1 clove garlic, minced
  • 1 tsp grated ginger

Instructions:

  1. Start by cooking the rice noodles according to package instructions. Once cooked, drain and rinse with cold water to stop the cooking process. Set aside.

  3. In another bowl, whisk together all the ingredients for the peanut dressing. Adjust the thickness by adding more water if necessary to achieve your desired consistency.
  4. Once the noodles are cooled, add them into the bowl with the vegetables.
  5. Pour the peanut dressing over the noodle and vegetable mixture, tossing everything gently until well combined.
  6. Serve immediately or refrigerate for 30 minutes to allow the flavors to meld together.
