How to Cook Thai-Style Grilled Duck with Spices

Thai-style grilled duck is a delicious dish that perfectly balances savory and aromatic flavors. This guide will take you through the step-by-step process to create this delectable meal, focusing on the spices that make Thai cuisine so special.

Ingredients

To prepare Thai-style grilled duck, you will need the following ingredients:

  • 1 whole duck (about 4 to 5 pounds)
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 2 tablespoons oyster sauce
  • 3 tablespoons palm sugar or brown sugar
  • 1 tablespoon ground black pepper
  • 2 teaspoons ground coriander
  • 2 teaspoons cumin powder
  • 2 teaspoons five-spice powder
  • 4 garlic cloves, minced
  • 1 tablespoon fresh ginger, minced
  • 1 tablespoon chili powder (adjust based on heat preference)
  • Fresh herbs for garnish (Thai basil or cilantro)

Preparation Steps

Follow these steps to prepare your grilled duck:

Step 1: Marinate the Duck

In a large bowl, combine soy sauce, fish sauce, oyster sauce, palm sugar, ground black pepper, coriander, cumin, five-spice powder, minced garlic, ginger, and chili powder. Mix well to create a marinade.

Place the duck in a large resealable plastic bag or a bowl, and pour the marinade over it. Ensure the duck is well coated. Seal the bag or cover the bowl, and refrigerate for at least 4 hours, preferably overnight. This allows the flavors to penetrate the meat.

Step 2: Preparing for Grilling

Before grilling, remove the duck from the refrigerator and allow it to come to room temperature (about 30 minutes). Preheat your grill to medium-high heat.

While the grill is heating up, prepare the duck by patting it dry with paper towels. This will help achieve a crispy skin when grilling. If desired, score the skin in a crosshatch pattern to encourage even cooking and enhance the flavor.

Step 3: Grill the Duck

Place the duck on the grill, breast side down. Grill for about 15-20 minutes, turning occasionally to prevent burning. Then, flip it onto its back and grill for another 25-30 minutes, or until the internal temperature reaches at least 165°F (75°C).

To achieve a perfect finish, brush the duck with some of the reserved marinade in the last 10 minutes of grilling, adding an extra layer of flavor.

Step 4: Rest and Serve

Once the duck is cooked, remove it from the grill and let it rest for about 10-15 minutes before carving. This resting period allows the juices to redistribute throughout the meat, ensuring it remains moist and tender.

Carve the duck into pieces and serve it with a side of steamed jasmine rice or fresh vegetable salad. Garnish with fresh herbs like Thai basil or cilantro for an authentic touch.

Tips for Perfect Thai-Style Grilled Duck

Here are some tips to enhance your cooking experience:

  • For added flavor, consider adding lemongrass and kaffir lime leaves to the marinade.
  • Adjust the spice level by modifying the amount of chili powder used.
  • If you prefer a smoky flavor, consider using a charcoal grill instead of gas.

Enjoy your Thai-style grilled duck, a fantastic dish that encapsulates the aromatic spices and flavors of Thailand!
