How to Cook Thai Stewed Pork (Pa-Lo)

Thai Stewed Pork, known as Pa-Lo, is a delicious and aromatic dish that hails from the rich culinary traditions of Thailand. This savory stew combines tender pieces of pork with a blend of fragrant spices and soy sauce, creating a comforting meal perfect for any occasion. Here’s how to cook Thai Stewed Pork (Pa-Lo) at home.

Ingredients

To make a traditional Thai Pa-Lo, you will need the following ingredients:

  • 1 kg pork belly, cut into bite-sized pieces
  • 4 hard-boiled eggs (optional)
  • 4 tablespoons soy sauce
  • 3 tablespoons dark soy sauce
  • 2 tablespoons fish sauce
  • 4 tablespoons palm sugar or brown sugar
  • 2 cups water or chicken broth
  • 3-4 cloves garlic, minced
  • 2-3 star anise
  • 1-2 cinnamon sticks
  • 1 teaspoon five-spice powder
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions

Step 1: Prepare the Ingredients

Begin by cutting the pork belly into bite-sized pieces. If you are using hard-boiled eggs, peel them and set them aside.

Step 2: Sauté the Aromatics

In a large pot or Dutch oven, heat a little oil over medium heat. Add the minced garlic and sauté until fragrant, being careful not to let it burn.

Step 3: Brown the Pork

Add the pork belly pieces to the pot and sauté them until they are browned on all sides. This will enhance the flavor of the dish.

Step 4: Add Sauces and Spices

Once the pork is browned, add the soy sauce, dark soy sauce, fish sauce, palm sugar, star anise, cinnamon sticks, and five-spice powder. Stir well to ensure the pork is evenly coated with these flavors.

Step 5: Simmer the Stew

Pour in the water or chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 1.5 to 2 hours. This slow cooking allows the pork to become tender and absorb the rich flavors.

Step 6: Add Hard-Boiled Eggs (Optional)

If you are using hard-boiled eggs, add them to the pot about 30 minutes before the stew is finished cooking. This will allow them to soak up the flavors of the sauce.

Step 7: Adjust Seasoning

Taste the stew and adjust seasoning with salt and pepper if needed. The balance of sweet, salty, and aromatic should be just right for a delightful experience.

Step 8: Serve and Garnish

Once the pork is tender and the flavors have melded beautifully, ladle the Pa-Lo into bowls. Garnish with fresh cilantro before serving. This dish pairs well with steamed jasmine rice or noodles for a complete meal.

Tips for the Best Pa-Lo

  • For enhanced flavors, marinate the pork belly in the soy sauces and spices for a few hours before cooking.
  • Feel free to adjust the sweetness by adding more or less sugar according to your taste.
  • You can add other elements such as potatoes or carrots for added nutrition and texture.

Cooking Thai Stewed Pork (Pa-Lo) at home is not only a rewarding experience but also provides a chance to enjoy the exotic flavors of Thai cuisine. Enjoy your cooking adventure!
