How to Make Thai Spring Rolls (Por Pia)

Thai spring rolls, known as Por Pia, are a delightful and versatile dish that captures the essence of Thai cuisine. These crispy treats can be filled with a variety of ingredients, making them a favorite among those who enjoy fresh and vibrant flavors. Here's a step-by-step guide on how to make your own Thai spring rolls at home.

Ingredients

For the spring roll wrappers:

  • 1 package of spring roll wrappers (available at Asian grocery stores)

For the filling:

  • 1 cup shredded cabbage
  • 1 cup grated carrots
  • 1/2 cup bean sprouts
  • 1/2 cup sliced mushrooms (shiitake or button mushrooms)
  • 1/2 cup cooked vermicelli noodles (optional)
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

For frying:

  • Vegetable oil (for deep frying)

Instructions

1. Prepare the Filling

Start by heating a tablespoon of vegetable oil in a frying pan over medium heat.
Add the cabbage, carrots, and mushrooms, stirring frequently until they soften (about 4-5 minutes).
Incorporate the bean sprouts and cooked vermicelli noodles (if using), cooking for an additional 2 minutes.

Once the vegetables are tender, add the soy sauce, sesame oil, cilantro, salt, and pepper. Mix well to ensure all ingredients are evenly coated.
Remove the filling from heat and let it cool before wrapping.

2. Wrapping the Spring Rolls

Lay a spring roll wrapper on a clean, dry surface with one corner pointing toward you (like a diamond shape).
Place about 2-3 tablespoons of the filling near the corner closest to you.

Fold the corner over the filling, then fold in the sides.
Roll the spring roll away from you tightly, ensuring the filling is secure.
Use a little water to seal the edge of the wrapper, so it sticks.

3. Frying the Spring Rolls

In a deep frying pan or wok, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).
Carefully lower the spring rolls into the hot oil, a few at a time, avoiding overcrowding.
Fry them until they are golden brown and crispy, approximately 3-4 minutes.
Remove the spring rolls and place them on a paper towel-lined plate to drain excess oil.

4. Serving Suggestions

Serve your homemade Thai spring rolls hot, accompanied by a dipping sauce such as sweet chili sauce or peanut sauce.
Garnish with fresh cilantro or lime wedges for an added touch of freshness.

Tips for Perfect Spring Rolls

  • Ensure your oil is hot enough before frying to achieve a crispy texture.
  • Experiment with different fillings – shrimp, chicken, or tofu can add variety.
  • If you're looking for a healthier option, consider baking instead of frying. Spray the rolls lightly with oil and bake at 375°F (190°C) until golden.

Making Thai spring rolls (Por Pia) at home is a rewarding and delicious experience.
Enjoy the process of creating these crispy delights, and share them with family and friends for a delightful meal or appetizer.
