How to Make Thai Steamed Coconut Custard

Thai Steamed Coconut Custard, known as 'Sangkhaya', is a delicious and creamy dessert that highlights the rich flavors of coconut and the subtle sweetness of palm sugar. This traditional Thai dish is a delightful treat that can be enjoyed on its own or paired with sticky rice. Follow this simple recipe to create your own Thai Steamed Coconut Custard at home.

Ingredients

To make Thai Steamed Coconut Custard, you will need the following ingredients:

  • 1 cup of coconut milk
  • 1/2 cup of sugar (preferably palm sugar)
  • 1/2 cup of rice flour
  • 1/2 teaspoon of salt
  • 2 large eggs
  • 1 teaspoon of vanilla extract (optional)
  • Banana leaves or small custard cups for steaming

Instructions

Step 1: Prepare the Mixture

In a mixing bowl, whisk the eggs until well beaten. Then, add the sugar and mix until fully dissolved. Gradually add the coconut milk while stirring continuously. In a separate bowl, combine rice flour and salt, then slowly incorporate this mixture into the wet ingredients. Stir until you achieve a smooth and lump-free batter. If desired, add vanilla extract for enhanced flavor.

Step 2: Prepare the Steamer

Fill a large pot with water and bring it to a boil. If using banana leaves, cut them into rectangular pieces and line the bottom and sides of your custard cups or bowls with the leaves. This will help prevent the custard from sticking and add a lovely aroma.

Step 3: Steam the Custard

Pour the mixture into the prepared cups, filling them about three-quarters full to allow for expansion during steaming. Carefully place the cups into the steamer and cover with a lid. Steam the custard over medium heat for approximately 20-25 minutes. You can check for doneness by inserting a toothpick in the center; it should come out clean.

Step 4: Serve and Enjoy

Once fully cooked, remove the custard cups from the steamer and allow them to cool slightly. You can serve the Thai Steamed Coconut Custard warm or chilled, depending on your preference. It can be enjoyed as a snack or dessert, perfect for any occasion.

Tips for Best Results

  • Ensure that the coconut milk is full-fat for a richer flavor and creamier texture.
  • If you prefer a sweeter custard, adjust the sugar according to taste.
  • For a unique twist, add pandan leaf extract for a vibrant green color and aromatic touch.

Thai Steamed Coconut Custard is not just a treat for the taste buds, but its beautiful presentation makes it an excellent dessert for gatherings and celebrations. Enjoy making this delightful dish that brings a taste of Thailand into your home!
