How to Make Thai Pandan Custard Bread

Thai pandan custard bread, also known as "Sangkhaya," is a delightful dessert that combines the unique flavor of pandan with soft, fluffy bread. This recipe will guide you through the process of making this delicious treat, perfect for any occasion.

Ingredients

To create the perfect Thai pandan custard bread, you will need the following ingredients:

  • For the Bread:
  • 3 cups all-purpose flour
  • 1/4 cup sugar
  • 1 packet (2 1/4 tsp) instant yeast
  • 1/2 tsp salt
  • 1 cup warm milk (110°F)
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • For the Pandan Custard:
  • 1 cup coconut milk
  • 1/4 cup pandan juice (blend pandan leaves with water and strain)
  • 1/2 cup sugar
  • 2 large eggs
  • 1 tbsp cornstarch
  • 1/2 tsp salt

Instructions

Step 1: Prepare the Bread Dough

In a large mixing bowl, combine the all-purpose flour, sugar, instant yeast, and salt. In a separate bowl, whisk together the warm milk, melted butter, and egg. Gradually combine the wet ingredients into the dry ingredients, mixing until a dough forms.

Knead the dough on a floured surface for about 10 minutes until it becomes smooth and elastic. Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm area for about 1 to 1.5 hours or until it doubles in size.

Step 2: Make the Pandan Custard

In a medium saucepan, combine the coconut milk, pandan juice, sugar, eggs, cornstarch, and salt. Cook over medium heat, stirring continuously until the mixture thickens, about 5-7 minutes. Once thickened, remove from heat and allow it to cool slightly.

Step 3: Assemble the Bread

After the dough has risen, punch it down to deflate. Divide the dough into equal pieces, based on the size of the bread you desire. Flatten each piece and spoon a generous amount of pandan custard into the center. Fold the edges over the custard to seal it, forming a ball or a bun shape.

Step 4: Second Rise

Place the filled dough balls on a baking tray lined with parchment paper, leaving enough space between each one. Cover them with a cloth and let them rise for another 30-45 minutes until they bloat up nicely.

Step 5: Bake

Preheat your oven to 350°F (175°C). Once the dough has risen for the second time, place the tray in the oven and bake for 20-25 minutes, or until they turn golden brown. Keep an eye on them to prevent over-baking.

Step 6: Serve and Enjoy

Once baked, remove the Thai pandan custard bread from the oven and let them cool on a wire rack. Serve warm or at room temperature. Enjoy these soft, aromatic treats with a cup of tea or coffee.

Incorporating the rich flavors of pandan with custard in bread form results in a unique dessert that will impress your friends and family. Try this delightful Thai pandan custard bread recipe and bring a taste of Thailand to your kitchen!
